    Every weekend, we go to the kitchen with recipes for big and small days alike. This Sunday, a quick Italian dish for lazy cooks.

    A pizza without dough, bubbling in the casserole, where everyone comes to dip their piece of bread. An Italian would never have thought that. A lazy Canadian, yes. Maxime Couture, self-taught author and incidentally father of two children in Montreal, claims the right to laziness in the kitchen, that is to say the right to have fun. He committed Thank you dad ! (1), an ode to uninhibited cooking for parents out of ideas: “Originally, it was a recipe book that I still keep at home. The idea was to put fathers back in the kitchen for everyday cooking. When mom leaves for an aperitif, there are other possibilities than ordering UberEats.” And it’s not just “for kids”. Swedish meatballs, fried Brussels sprouts, mac and cheese with leftover cheese from the fridge: laziness breeds creativity.

    For four servings, you will need:

    • olive oil
    • 1 small chorizo, diced
    • 1 chopped onion
    • 1 large can (785g) diced tomatoes
    • 1 large ball of fresh mozzarella, sliced
    • 1 small handful of chopped fresh basil
    • 1 baguette bread, cut into sections
    • salt and pepper

    Preheat the oven to 180°C. In a cast iron skillet over medium heat, pour a little oil and grill the chorizo ​​for five minutes. Add the onion, mix well and continue cooking. When the chorizo ​​releases its oil and coats the onion well, add the tomatoes. Add salt and pepper. Place the mozzarella over the tomatoes. Bake in the center of the oven for fifteen minutes, until the cheese is slightly melted. Put the pan in the center of the table and garnish with basil. You can now dip your bread pieces directly into the sauce!
