    Every Tuesday, “Liberation” offers you a student menu, complete, inexpensive and easy to make: starter, main course and dessert, for 3 to 5 euros per head.

    So these revisions of partials, are they going well? To have energy and assimilate your classes, we are preparing a complete and economical meal this Tuesday. We start with a chickpea salad with red onions, lemon, grapes and feta, we continue with Basque-style chicken and we end gently with fruit, fresh or in syrup, with chocolate sauce. Total: about 5 euros per head.

    The starter: a chickpea salad

    Mix a small can of chickpeas with half a minced red onion, a tablespoon of raisins, 30 g of feta cheese cut into cubes, chopped mint (as much as your heart tells you), minced garlic (idem) and a lemon vinaigrette (for this, mix olive oil and the juice of half a lemon, with a little salt and pepper).

    The dish: Basque-style chicken

    For two servings, you will need: 1 onion; 4 chicken drumsticks or wings or 2 chicken thighs; vegetable or chicken broth; 2 tomatoes or a small can of peeled tomatoes; a dozen green olives; garlic ; thyme; 1 bell pepper; salt pepper.

    Brown an onion, add two chicken thighs or, less expensive, four drumsticks or wings, Moisten with broth to height. Add two quartered tomatoes or a small can of peeled tomatoes in juice and a dozen green olives. Add garlic and thyme. Well, as you have noticed, all this is not especially Basque, so add a seeded pepper cut into strips.

    Let simmer gently for 20 minutes or more. Made the day before and reheated, it’s even better. Serve with rice or with potatoes cut into pieces and cooked with the chicken.

    The dessert: chocolate fruit

    For this express and gourmet dessert, you can choose any fruit (banana, pear, apple, peach, kiwi, pineapple, clementine, etc.) fresh or in syrup. Cut them into pieces after having cleaned them well and possibly having removed the skin. In the microwave or in a small saucepan, melt a few squares of dark chocolate (or milk, if you prefer), with a little water if necessary to prevent it from burning. Cover the pieces of fruit with this chocolate sauce and enjoy.
