Every Tuesday, “Liberation” offers you a student menu, complete, inexpensive and easy to make: starter, main course and dessert, for 3 to 5 euros per head.
As you are probably revising your partials, we will bet on slow sugars, on the one hand, and prepare dishes that do not require spending hours in the kitchen. Today, we start with an egg-mayo, we continue with broccoli-lemon-goat cheese pasta, and we end with strawberries with cream and mint.
The starter: an egg-mayo for protein
All you need is an egg, a heaped teaspoon of mayonnaise, and that’s it. Cook the egg in boiling water for eight minutes. Cool it under cold water (or in a bowl of ice cubes), peel it, cut it in half, add a little mayonnaise on its side and enjoy. If you have some on hand, you can add pickled vegetables, for example red onions, or a few leaves of green salad.
The dish: fresh broccoli-lemon-goat cheese pasta for energy
This dish, which should give you enough energy for your revisions, is ready in a few minutes, and we do everything in the same pan (it will save you wasting time with the dishes). You will need: 80 to 100 grams of pasta of your choice (orecchiette or rigatoni work well, as do penne, conchiglie or trottole); olive oil, salt, pepper; half a broccoli; 30 g of fresh goat cheese; half a lemon.
Cook the pasta for the time indicated on the packet, in a large saucepan of salted boiling water. Meanwhile, zest the half-lemon and squeeze the juice, and cut the half-broccoli into pieces. Five minutes before the end of cooking, add it to the pan directly. Drain the pasta and broccoli, salt, add the lemon zest and juice and a little olive oil. Mix, then add small pieces of fresh goat cheese. Pepper. Taste immediately.
The dessert: strawberries with cream for fun
They are coming back to the stalls these days, and it is an understatement to say that we are delighted: strawberries are a sign that summer is almost here. For this express and delicious dessert, you will need: 6 or 7 strawberries per person; a good tablespoon of fresh cream; two sprigs of mint; a level teaspoon of powdered sugar.
Wash, hull and cut the strawberries in half. In a bowl, mix the cream and the sugar and the finely chopped mint. Add the strawberries, and eat your dessert either by mixing everything, or by dipping the strawberries in the mint cream.
